Mexican Delights, a small business based out of Riverside, is owned by Maria Gonzalez, who stated her eatery is driven by gratitude and positive energy.

She is particular that clients will take one bite of her top quality Mexican food - - and delight.

" The quality is what makes everything taste excellent," Gonzalez said. "I don't offer anything I won't consume."

Mexican Delights's premiere at the Grand Prix has actually contributed to the growing culinary variety of the occasion, which draws at least 180,000 people to downtown Long Beach during its three-day run.

One is near the entryway of Hospitality Village, where Mexican Delights uses ramen birria, cream corn cups, fresh fruit trays, aguas frescas, and tostilocos. Tostilocos is a popular Mexican street food that includes Tostitos tortilla chips topped with marinaded pork rinds, cucumber, jicama, lime juice, Valentina hot sauce, chamoy, Tajin chili powder, salt and cracker nuts. This place was where 19-year-old Vanitee Mata, Gonzalez's child, was stopping people on their way to the circuit with little, totally free samples of the aguas
